My husband’s birthday was a few weeks ago and I was feeling all domestic. I wanted to make him a birthday cake from scratch, but since we were on a tight schedule, I decided to whip up a box cake and the icing could be homemade.
We were visiting my parents and my mother reminded me about her fudge icing recipe. I had forgotten how delicious it is. I especially like poking holes in the cake before pouring on the icing. Even more chocolate-y goodness to enjoy that way.
Here’s the recipe to enjoy on your next birthday — or any day!
Fudge Icing
1 stick butter
6 tbsp milk
3 1/2 tbsp cocoa
1 lb powdered sugar
1 tsp vanilla
Optional: chopped nuts, coconut
Directions: Bring butter, milk and cocoa to a boil. Take off heat and add sugar, vanilla. Pour the icing over the cake while it’s out-of-the-oven warm so the icing will melt nicely and then harden. For extra chocolate, poke holes in cake with a toothpick or straw before adding the icing.
