Mealtime Mama: Easy Fettucine Alfredo

I know we should all be eating healthy these days since swimsuit season is sneaking up on us. BUT… let’s face it. Sometimes, especially when the news is scary, you just want a little comfort food.

One of the things I’ve done while we’re #stayinghome during the pandemic is making my three kids find a few recipes online that sound like something they’d really like to eat. (We were all getting sick of the same old tired dishes we have always had.)

My son Jack ran across this recipe on the AllRecipes.com website. This particular recipe is called “To Die For Fettucine Alfredo” by Erin Marie. Jack and I prepared this together for lunch on a Sunday, and it was surprisingly easy and SO very delicious. My mom, who is a seriously great cook, also agreed that this one is a keeper!

The only changes/additions we made to this recipe was to add some blackened, grilled chicken pieces to the top of it, and then I put a little diced tomato and green onions on mine. Highly recommend this one when your crew needs something hot, comforting and delicious.

To Die For Fettucine Alfredo

Ingredients:

  • 24 ounces dry fettuccini pasta
  • 1 cup butter
  • 3/4 pint heavy cream
  • salt and pepper to taste
  • 1 dash garlic salt
  • 3/4 cup grated Romano cheese
  • 1/2 cup grated Parmesan cheese
