Mealtime Mama: Sheet pan chicken fajitas from a new favorite source

Happy Monday, mamas!

Ever since we all got sent home in mid-March, I’ve been on the hunt for recipes that everybody in our family of 5 would actually eat. (There are a couple of picky eaters that make this feel like mission impossible some days.) But I’m happy to report that I’ve found a few of these crowd-pleasing recipes lately, and most of them have come from my new favorite place to hunt for recipes, the DamnDelicious website.

The site is created and run by Chungah Rhee, whose “about” page is one of the best I’ve ever seen after more than 12 years of running a website. (I may be a tad biased because it looks like Chungah loves her Corgi dogs as much as I love mine.)

Her entire site is organized and fun to browse. The photography is gorgeous, and the writing is top-notch. From what I’ve seen, the comments from her readers are overwhelmingly positive because her recipes are easy to understand and they really do work out great. Our family has already tried several of them and have enjoyed them all.

The one I’m passing along to you today is for Sheet Pan Chicken Fajitas, which my husband says is even better than restaurant fajitas! And both of my picky eater kids loved it, too. It’s super easy to clean up afterward because it’s done on a sheet pan, so dirty dishes are minimal. Doesn’t this look gooooooood?

 

Quick tip: I tripled the fajita seasoning mix so I could save some for the next round of fajitas, which shaved off some time the second and third time I made this recipe.

Sheet Pan Chicken Fajitas

  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into thin strips
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 orange bell pepper, cut into strips
  • 1 red onion, cut into wedges
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro leaves
  • 2 tablespoons freshly squeezed lime juice
  • 6 (8-inch) flour or corn tortillas, warmed
