One of my favorite desserts during summer is a classic — good ol’ New York cheesecake. Bonus points if it’s drizzled with strawberries and sauce.
So you can imagine how happy I was when my 18-year-old son said he was going to try making a cheesecake from scratch. He found the recipe, went to the store for ingredients, and dove into the project. He didn’t ask for help, but he said a few times during the process that the recipe was difficult for him to do. He wasn’t sure it would turn out right.
He let the cheesecake chill in the fridge overnight, and we tried it the next day. It was beautiful. Not a crack in sight.
But to be honest, I wasn’t expecting much on taste. He had already warned me that it might not be good. But ya’ll… it was AMAZING. It’s one of the best cheesecakes (including homemade or restaurant) I have ever had — period. And it was made by a guy without a ton of baking experience who just finished his freshman year of college. So I know for sure that the mamas of NWA can handle it, too.

One of my favorite aspects of this recipe is how it includes a hint of lemon that comes through at the end of each bite. It makes it that much more refreshing, especially during these hot months of summer.
I told my son to hang onto this recipe because if he makes it for a future girlfriend, there’s a good chance she’ll marry him. 🙂
