If you LOVE tomatoes and pasta, this recipe is right up your kitchen alley. It has officially become my daughter Kate’s favorite way to eat pasta, and she requests it regularly.
Keep in mind that the best time to have this dish is in late spring and early summer when you can buy (or grow) fresh garden tomatoes. (Get them from the local farmer’s markets in Northwest Arkansas if you don’t have a garden.)
The freshness and ripeness of the tomatoes really does make this dish shine. If you want to add a protein to it, we recommend a lightly blackened chicken breast. Enjoy!
Angel Hair Supreme
Ingredients:
1 8-ounce package of angel hair pasta (or any type you prefer)
1/2 cup olive oil
2 cloves garlic, minced
1/4 cup sliced green onions
3 large tomatoes, diced (I always use an extra tomato or two.)
2 tbsp. chopped basil
1/4 tsp. coarse ground pepper
Directions:
Heat oil, stir fry garlic and green onion but don’t brown.
The add diced tomatoes, basil and pepper.
Stir and cook for 2 to 3 minutes.
Toss tomato sauce with hot pasta.
Sprinkle with parmesan cheese.
Serve and enjoy.
