We love pasta salad any time of year, but it’s especially good in the summer when you don’t want anything too heavy or too hot.
We’re big fans of pasta salad that has an oil-based dressing versus something that’s too creamy (or calorie-rich). We ran across this recipe for Summer Orzo Pasta on a website called A Cedar Spoon, and it’s perfect! It incorporates lots of veggies (including beans or chickpeas for protein) and the orzo pasta makes it feel light and airy.
We’ve already made it for our families and it’s SO GOOD. We make extra and stick it in the fridge because the leftovers are delicious. It’s a great side dish but it’ll also work as a light summer meal.
