Mealtime Mama: Stir fry recipe

Mamas, I’ve been on the hunt for recipes that won’t take a ton of time but will be relatively healthy and incorporate extra vegetables and protein. A quick stir fry recipe seems to check all the boxes, so I’ve been looking for one with a flavor we’ll all like.

Here’s the one we tried last week and loved. You can serve it over any kind of rice you like or even noodles.

Here’s the list of ingredients you may want to have on hand (although stir fry lends itself to changing up the vegetable list depending on what your family likes most.)

  • Broccoli florets (we used fresh ones)
  • Red bell pepper
  • Green bell pepper
  • Onion
  • Water chestnuts (from the can)
  • Baby carrots
  • Salt and pepper
  • Boneless, skinless chicken breasts cut into 1 inch cubes
  • Olive oil
  • Minced ginger
  • Minced garlic cloves
  • Corn starch
  • Chicken broth
  • Cold water
  • Low sodium soy sauce
  • Honey
  • Sesame oil
  • Crushed red pepper flakes (optional)
