Mealtime Mama: Hobo Soup


My family and I went to a holiday cookie decorating party a week or so ago and the host, Robert Williams, served this soup.

It was just perfect for a cold day and when Robert said it was super easy, I (Shannon) had to ask for the recipe, of course. I’m all about yummy and easy. If you’re having a low-key New Year’s Eve party, this might be a good fit. You can make it in the Crockpot, heat through, then leave it on simmer while the party’s in swing.

Hobo Soup

Two pounds ground beef

2 cans Ranch style beans

3 cans minestrone soup

2 cans Veg-All

1 can Ro-tel

1 can Italian-seasoned tomatoes

1 tablespoon Greek seasoning (Cavender’s)

Salt and pepper to taste

Directions: Brown ground beef, add to slow cooker. Add remaining ingredients and heat through on low. Turn down to simmer to keep warm.
